Rather than remove all references to my dimension, delete it, reload it with a new name and then associate all my measures back to the dimension... can I simply rename it in the datamart table without breaking PMF?

Sorry, that's not a safe approach. There are internal keys attached to each dimension and this is all carefully synchronized by PMF. Any manual change of the internals of the data mart not done by someone here at IB is going to break the app. It'd be like hacking your SAP backend.
