Currently, we need to have a tool that functions like OLAP but can handle over 500,000 records with at least 10 columns. Our problem lies in the fact that OLAP stalls with that many records and that we need the dynamic functionality of OLAP because a hardcoded pre-selection of data is not an option. The main functionality in OLAP that we need is removing columns, querying by fields, and dynamically loading the fields and selection criteria within it.
Is there any way to either manipulate OLAP to handle that number of records? Is there a way to apply OLAP on a limited number of records and then extract the filtering /sorting queries and apply them to the full (500,000+ records) data set to export?

This tool you're using now probably does not use IE (or any other internet browser) to interface with the user. Because that is where the problem lies. Browsers in general cannot handle these huge amounts of data. Therefor JG's suggestion would be the best way to go when working with browsers as your front end. You do need 765 or up and licenses (which are not free) for the active stuff.
