I had a Projects folder for two weeks that I was developing in and now it has disappeared. I am the only person developing in Dev Studio, not sure what could have changed that makes it disappear.

I think if you are viewing the main explorer and click on WINDOW then OPTIONS there is a "Show Projects on explorer tree" check box. Make sure that it is checked. This in the veriosn I have which is 5.2.6. Thank you.
You could have deleted the .gfa file which will make the project not show in dev studio. Check C:/ibi/apps/ if there is a folder with the same name as your missing project you did not lose your work. All you have to do now is add the project back to dev studio.
