Is it possible to specify fields as filters in an OLAP report without the field being a dimension when filters are displayed? I read through some material and I didnt see much on it. Seems that pretty much the only fields available would be those displayed in the report - same as those in defined in the metadata.

Your observation is correct. Only fields mentioned in the OLAP request as dimension can be filters. You do not have any control over that, it is all done automatically by the applet that takes the fex code and converts it into olap code.
It's just the way it works....
