I am running WF 8.0.08 and I find it to be relatively stable. There have been a few things here and there that I have had to patch, but I'm pretty pleased with it. With that being said, I expect 8.1.03 to be stable as well, as I believe most, if not all of the large architectural changes have been stabilized. Also there are some value added improvements in 8.1.03 (I believe app studio is more stable among new functionality that can be useful). If I were just starting my upgrade now, I believe I would go with the latest and greatest at this point (I believe 8.2 is supposed to be out around summit. Might be worth thinking about that).
With that being said, I would also make sure I did a sandbox install at least one month before you begin any upgrade. Do a practice conversion (Converting is a big deal and there are multiple ways to go about it), and also explore the tool. I find this the best way to understand what I'm getting myself into. Before I went to 8.0.08, I installed a sandbox version that I experimented with for at least 2 months before I started converting all of my reports over.
As for adapters, what are you trying to understand? I use the Oracle adapter and I find it is better then 7.7.03. Any adapters that you had in 7.7.03 are still available in 8.x and will most likely have had a series of improvements made to it (I can't speak to a lot of the other adapters because I don't use them, but if they update one RDBMS adapter, I would assume they would update the others too).

Eric -- It was unclear from your post whether you are using App Studio or Dev Studio in version 8. Are you using App Studio? If so, how is that and how is the response time?
Thanks

I don't use app studio. As MattC points out, its buggy in this version. I do all of my work in dev studio. I don't seem to have as many issues as Francis apparently is though.
